Chicken & Rigatoni coated in a creamy and delicious Garlic Sauce, the blend of the sauce creates a rich and smooth flavour that makes the mouth water, delicious alongside a fresh Focaccia.

Ingredients (Serves 4 - Approx. 396 KCal Per Portion)
400g Chicken Breast (Cubed)
250g Rigatoni Pasta
1 Tsp Paprika
1 Tsp Garlic Granules
6 Garlic Cloves (Peeled (Peeled & Chopped)
½ Tsp Sea Salt
½ Tsp Freshly Ground Black Pepper
250ml Chicken Stock
150g Light Cream Cheese
75g Mozzarella (Grated)
Parmesan (Optional, for Serving)
Freshly Chopped parsley (Optional, for Serving)
Method
Heat the Oil in a Large Wok over a Medium-High heat, Add the Chicken, and fry for 4-5 Minutes.
Add the Paprika, Garlic Granules, Chopped Garlic Cloves, Sea Salt & Black Pepper, and fry for a further 4-5 minutes.
Add the Chicken stock and bring to a simmer, Turn the heat down to Medium and leave to reduce for 6-7 minutes.
Add the Cream Cheese and stir to combine, bring back to a Simmer and leave to thickenfor 15 minutes.
Whilst the Chicken is Simmering, cook the Rigatoni for 2 Minutes less than the Manufacturers packaging, Drain and Set aside.
Add the Rigatoni to the Wok, stir to combine making sure the Chicken and Rigatoni are fully coated in the Sauce.
Add the Grated Mozzarella and cook for 2-3 Minutes.
Serve topped with a dash of Grated Parmesan, Fresh Parsley & Enjoy
Notes:
Absolutely delicious alongside fresh Focaccia.
Don't have any Rigatoni? No problem, just substitute with Fusilli or Penne Pasta.
