Creamy and delicious, warm and hearty homemade tomato soup, perfect for those cold winter nights.
Serves 4-6 - Approx. 170 KCal Per Portion
Ingredients (Serves 4-6 - Approx. 170 KCal Per Portion)
2 Tbsp Extra Virgin Olive Oil
800g Tomatoes (De-Skinned & Chopped)
1 Medium Brown Onion (Chopped)
1 Medium Red Onion (Chopped)
1 Tsp Salt
1/2 Tsp Black Pepper
1 Tbsp Paprika
100g Tomato Puree
1 Tsp Garlic Puree
1 Tsp Chilli Puree (Optional)
2-3 Carrots (Peeled & Chopped)
1 Beef Stock Cube
1 Vegetable Stock Cube
1250ml Boiling Water
1 Tbsp Brown Sugar
1 Tbsp Dried Basil (Jar)
200ml Crème Fraiche
Method
1. Heat olive oil in a large pot or saucepan (medium heat), add onions and cook for 7 - 10 Minutes until Translucent
2. Add Salt, Black Pepper & Paprika and cook for a further 2 minutes
3. Add Tomato Puree & Garlic Puree (& Optional Chilli Puree) and stir in for 30 Seconds
4. Add Carrots and Tomatoes to the Pot/Saucepan
5. Combine the Boiling Water with the Beef & Chicken stock Cubes and add to the pot/saucepan, cover and leave to simmer for 25 minutes
6. Add the brown sugar and leave to simmer for another 5 minutes uncovered
7. Remove from the heat and leave to cool for 10 minutes
8. Add the Basil and Put into a Blender and Blend until smooth (You can also use a Hand Blender)
9. Return to the pot/saucepan to re-heat, stirring in the Crème Fraiche whilst re-heating
10. Serve with a sprinkle of Basil & Croutons & Enjoy.
