Can be Cooked in the Oven or Air Fryer
Stuffed with the creamy combination of Ricotta & Spinach this has become one our household favourites, using only a few ingredients you can create this Spinach & Ricotta Chicken Roll that is Creamy, Juicy, Moist & Delicious.
Perfect for those midweek nights when you just aren’t sure what to cook.
Serves 2
Ingredients
2 Chicken Breasts (Approx. 250-260 each)
120g Baby Spinach
100g Ricotta
1-2 Cloves Garlic (Finely Chopped/Minced)
Lazy Garlic is great if you don’t have time to prepare the Cloves!
30g Grated Mozzarella
Garlic Salt
Chicken Seasoning
Paprika
1 Tbsp Olive Oil
(6 ‘tooth picks’ / Food Stick)
Method
The Filling
In a large Pan or Wok, heat Oliver Oil over Medium-High Heat
Add the Chopped Garlic and cook for 1-2 minutes.
Reduce the heat to Medium and add the Spinach and cook until wilted.
Remove from the heat and add the Ricotta and mix until fully combined with the Spinach & Garlic. Set aside on a plate to cool whilst you prepare the chicken.
The Chicken Roll
Butterfly your chicken breasts then flatten further with a meat tenderizer or Rolling Pin. (They don’t need to be perfect, just flat enough to roll - See image at bottom of page)
Season both sides with Garlic Salt, Chicken Seasoning & paprika
Take your Spinach & Ricotta mix and spread evenly over the flattened chicken breasts.
Gently and tightly roll the breasts encasing the Spinach mix inside. (Don’t worry if a little excess squeezes out - See image at bottom of page))
Skewer with the food sticks to stop it unravelling.
Wrap in foil and they are ready to cook in the Oven or Air Fryer.
Oven Cook.
Pre-heat your oven to 190°c (375°f)
Place the breasts onto a baking tray and cook in the middle of the over for 25 minutes.
Remove from the oven and foil.
Sprinkle the Mozzarella over the 2 breasts evenly and return to the middle shelf of the over for a further 5 minutes.
Remove from the oven & ensure chicken is thoroughly cooked before serving! & and Enjoy with your favourite Veggies.
Air Fryer
Place both breasts in the foil in the Air Fryer and cook at 190°c for 20 minutes.
Remove from the air fryer and foil.
Sprinkle the Mozzarella over the 2 breasts evenly and return to the air fryer and cook for a further 3 minutes at 190°c
Remove from the air fryer & ensure chicken is thoroughly cooked before serving! & and Enjoy with your favourite Veggies.
Tip: Delicious with spiced or new potatoes and Tenderstem Broccoli or Crunchy Salad
